Fermentation / maceration: 1st Fermentation in a truncated cone of French oak with controlled temperature.

Types of yeast for fermentation: Autochthonous.

Malolactica: Yes, in oak.

Aging: 24 months in 500 L French oak barrels of various small cooperage.
